Easy Chocolate Covered Strawberries

16 ounces of dark chocolate chips
1 pound fresh strawberries with leaves
1 cup of shaved coconut
1 cup of ground pistachios

Insert toothpicks into the tops of the strawberries.
Spread your coconut and pistachios flat separately on a plate
Line a sheet tray with parchment paper. Or wax paper.
In a double boiler, melt the chocolate, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries about ¾ of the way into the melted chocolate.    ( if you don’t have a double boiler, a stainless steel bowl, and pot of water will be fine. Just be sure that the boiling water isn’t touching the bowl or you will burn the chocolate)

Allow excess to run off, and alternate rolling all sides of the strawberry in the shaved coconut, and ground pistachio.
Place strawberry on parchment lined sheet tray, and allow the chocolate and toppings to set in a refrigerator for at least an hour.
